Hôtel de Ville Crissier
All projectsAfter three years of studies and assessments, a series of major works began at the Restaurant de l'Hôtel de Ville in Crissier in July 2011 to modernise the main production facilities - the kitchen, the goods-in area, the storage and preparation area - and to completely refurbish the restaurant rooms (decoration, furniture, layout, crockery, etc.). The first part of these works (kitchen) was completed in October 2011 under chef Philippe Rochat. The second part took place in summer 2012 under the new era of chef Benoît Violier.
All of the work carried out by these 2 great chefs represented a substantial investment, which meant that the restaurant had to be completely closed for several months. The surface area of the kitchen has been increased by 48m2 to allow a new layout for the production and control of the various dishes. The entire layout has been assembled in brushed stainless steel, and all the technical installations have been resized and replaced. The 2 dining rooms have been completely renovated, as have the entrance hall with its stairwell and the reception area.
In the chosen colour palette, different shades of brown, including the stucco wall finish; waxed mineral plaster (Natureplus label), provide a feeling of comfort and soft luminosity, recalling the earth as an original material and substrate for the main culinary ingredients. These natural tones are combined with chocolate brown, which gives the interior a chic, modern feel, providing a contrast similar to a stage backdrop, for example, in the structured carpet flooring with its customised pattern. Finally, the softness of the different fabrics, curtains, draped blinds, chair covers, tablecloths and upholstery accentuates the serenity of the space.
Wood, elm, the hard-wearing timber par excellence, is the predominant natural material in this universe, bringing a connotation of warmth and conviviality. All the joinery is in elm, either carved on the main faces of the 2 rooms, or laid flat on the faces of the service units.
